Creamy Green Goddess Cabbage Salad

  • 1 Mandoline slicer optional

Ingredients
  

For the Dressing

  • 1/3 cup fresh squeezed lemon juice Juice from (~2 medium sized lemons)
  • 1/4 cup olive oil
  • 1 small shallot chopped
  • 2 cloves garlic
  • 1 cup basil
  • 1 cup arugula packed
  • 1/2 cup hemp seeds
  • 1/2 teaspoon salt

For the Salad

  • 1/4 cup fresh chives finely chopped
  • 4 small Persian cucumbers chopped
  • 3 to 4 cups green cabbage finely sliced
  • 1/4 cup red onion finely chopped
  • 1 small Granny Smith apple chopped

Instructions
 

  • Finely chop the cucumbers, green cabbage and red onion and add them to a large mixing bowl (see note 1)
  • Dice the chives and set aside.
  • Chop or grate the Granny Smith apple and add it to the salad mixture. Set aside.
  • Add all dressing ingredients to a high-powered blender. Blend until smooth and creamy.
  • Pour the dressing over the tossed salad and toss until well coated.
  • Garnish with chives. Serve immediately for the best texture and flavor.

  1. Option to use mandoline slicer for fine slicing of cabbage, cucumber and red onion
